The Pig

  • MWR Smoker - Jeff to reserve. They said we did not receive a discount, and that we didn't last year either. It's $90. Jeff has made the reservation as of 2016.05.06
    • Need someone with a truck for picking up the Smoker and bringing it back. 2" ball, 4' of lights ~ Jeff to ask opticron
  • Using Michele's farm connections.
    • Pig Bill: $252 , does not include post processing.
    • 2 pigs @ 180 lbs EACH
    • 360 lbs @ $0.70 lb = $252
    • Estimate loosing 50% of weight to processing
    • Planning on cutting off the heads to make it fit, and slicing off anything keeping it from fitting and sticking them in the side smokers
  • Kirk said he has farm connections if we want to utilize them for future pigs

Pre-Event Tasks

  • Two Months Out
    • Begin Scheduling NPR Event
    • Solicit for Flier Design
    • If blocking off the street, file for a permit with the city
    • Setup Social Mediums
    • Rent Smoker ($45 a day from MWR, Total cost of $90)
  • One Month Out
    • Hang up Fliers
    • Solicit for Sides
  • Two Weeks Out
    • Call Trash pickup and schedule for the day before and after the pig roast. Do this two weeks in advance - Jeff to ask Phil
      • $25 for the extra pickup
  • One Week Out
    • Post Reminder messages on social mediums

Day-Before Tasks

  • Noonish - Pickup Roaster around noon, have setup at the shop in time for 3pm. - Kinsey and Jeff
  • Noonish - Jeff Makes Sure the following is at the shop.

  • 3pm - place first load of fuel in the smoker to start getting it up to temp. - Scott
  • 4pm - the pigs will arrive at the shop - Michele
  • Upon Pig Arrival: - Scott, Jenn, Norm
    • Fit check to make sure the pigs will both fit in the smoker without breaking them down.
    • Prep pigs for the rack -
      • Break down what is needed to fit.
      • Oil Skin of pig and flip upside down on rack
      • Clean fat from inside cavity
      • Inject Marinade into meat
      • Dry out cavity
      • Season inside cavity (Salt, Pepper, Garlic, and binder (TBD))
      • Tie down pig to rack
      • Place temperature probes in pork (extra wireless or outside oven temp sensors needed)
      • Place pigs in smoker
      • Set timer for 15 min for the first 4 hours to monitor and predict smoker thermal loss
      • 30 min timer for the remainder of time.
  • 9pm - If we are making a lot of noise, this is what time the noise needs to die down as a courtesy to the neighbors
  • Before 2am
    • Setup Tents
  • 2am - 6am: Skeleton Crew, at least Norm and Kinsey
  • 6am - Scott and Jeff Return
  • 6am - Jeff Arrives with Breakfast Sandwiches from Hardees
  • 10am - Anyone else setting up

  • Straight to Ale has a program for donating beer (kegs or cans) to non-profits for events. They require at least 60 days notice and is something we should look into for Pig Roast 2017.
  • The silent auction was a huge success and we's to do it next time as well.
