Stuffed Artichokes (family recipe from Aunt Elaine)

  • Italian bread crumbs (lots)
  • Italian salad dressing (about 4oz)
  • Garlic Powder
  • Onion Powder
  • Tony Chachere's or anything with a kick
  • Cheese: (don't skimp on the cheese)
    • Shredded mozz
    • shredded sharp cheddar
    • a block of cheese with a kick like pepper jack
  1. Par Boil artichokes - stick a fork in the stem to see if it's slightly stiff. If it gets too soft all the leaves will fall off when you stuff it.
  2. Cut stem off so its flat
  3. mix ingredients till sticky, wet, and squishy (not soup) but much wetter than stove stop stuffing
  4. Stuff the leaves heavily
  5. Wrap in heavy tin foil to make a water tight seal - use 2 thin tin foils sheets (make a plus sign and stick the artichoke in the middle)
  6. Boil in about 3 inches of water for about 1.5 hours. You have to keep adding water. If you put a lid on it, the stuffing gets too soggy.
