Keto Pancakes


  • 0.25c almond flour (add a little more if it looks too runny, I think I ended up using a third of a cup instead)
  • 0.25c heavy whipping cream
  • 2 eggs
  • Pinch salt
  • 2tsp stevia
  • 0.25tsp baking powder
  • 1tsp vanilla extrat
  • A couple good shakes of cinnamon


Stir together, pour into a buttered pan on medium high. Cook about 3-4 minutes, flip, and cook about 2 minutes more.

You could use sugar-free maple syrup, or take about a cup of frozen mixed berries, half cup water, about a tablespoon or two of stevia, and boiled it until it reduced to syrup consistency.

Roasted Curry Cauliflower

A side that is really good is roasted curry cauliflower. Chop a head of cauliflower into florets, place into a mixing bowl and pour half a stick of melted butter on top. Toss with two teaspoons each of the following: turmeric, chili powder, garam masala, curry powder, paprika, cayenne, garlic powder, onion powder, salt + pepper. Bake at 450*F for 15 minutes. Top with chopped green onions/chives/whatever herb you want. Dip in sour cream or yogurt.
